Cabbage Apple soup [Oct. 10th, 2006|06:58 pm]

This turned out REALLY good...

1/2 medium cabbage, chopped to 1-inch pieces
1 clove garlic, chopped fine
1 small onion, chopped fine
1 medium apple, pared, cored, and chopped (if you love apples in savory foods, 2 apples would not be out-of-line)
2 tsp. olive oil or other vegetable oil
2 smoked sausages of the smoked-sausage-to-eat-on-a-bun variety (I used cheddarwurst, which makes the broth very slightly cheesy, but regular smoked sausages would work too), chopped into coin-size discs
2 14-oz. cans (=4 cups) chicken broth
1 cup cooked rice
1 bay leaf
8 whole cloves
1/2 tsp. thyme
black pepper to taste

Saute cabbage, garlic, onion, and apple in oil over medium-high heat until the veggies release some juices (about 7-9 min.). Add all the rest of the ingredients, bring to a boil, then simmer for about 20 min. or until cabbage and onion are done enough for your taste. Take care in adding salt--it probably doesn't need any, since the sausages and canned chicken broth are pretty salty already. Remove bay leaf before serving; warn diners to watch for cloves. Makes four servings.
